I was a young upstart apprentice chef working at Archers restaurant in Fort Lee. I was asked to go to Picco Lissimo restaurant next door and help it get off the ground. I became a partner. One muggy afternoon at 2:00I was working in the kitchen and this salesman walks in, and I really couldn’t be bothered, a guy named Settimo with a station wagon and a few bags of flour and tomatoes. He could never handle my volume. Just to get rid of him and not really polite I said “come back at 11:00 tonight when I’m done cooking”, thinking he will never come back. The son of a bitch came back. Now I had to give him my order. Anyone willing to work that hard I had to give him a shot. Thirty-nine years later I’m still doing business with his company E& S Italian imports from that station wagon to a 65 million a year business. We were buying trailers of pasta together. Last night he had his company Christmas party at my revived version of Picco Lissino, Picco Tavern, and I am sure we are both great-full and cherish our story..

It's a Wonderful Life. I think we all can relate to the epic movie starring James Stewart in the way of sacrifices we made that changed the direction of our lives to help others. The differences we made in other people lives for the better and sometimes for the worse, hopefully not by our intention. I think we all felt Abandonment when things got rough, a good learning curve of finding out who your friends are. In my life coming to Picco Tavern was my Jimmy Stewart moment when I was given an opportunity to revive a restaurant career I sorely missed after a series of unintended setbacks. The enormous amount of people who remembered my efforts who worked for me, old friends, neighbors, classmates, business partners, everyone from millionaires to people who pumped my gas showed up to wish me well. This was an incredible 30 months, and I want to thank all of you for support and encouragement as I try this restaurant business just one more time. I wouldn't have made it without you! Here’s to all of you on this Christmas Eve. Damn I wish I could sing.... I couldn't have made it without a guy called Mr. P who loves bringing joy to all and you and all the people I worked with so here's to you all! Happy Holidays! From all of us at Picco Tavern

Our quarterback of the kitchen is Michael DeNigris. Sometimes I can do it. But Michael does it better. The work of a good expediter and a great Chef is in the pacing of your dinner. It’s in the steadiness of the dining room and the kitchen. It’s in the sense that everyone in the restaurant is moving in rhythm. The expediter sets that rhythm, managing the workflow of the kitchen. Like the quarterback looks at the defense. He calls the signals like Payton Manning calls the plays from the line. Great chefs are great expediters and are vital to smooth service. They fire dishes — signaling cooks exactly when to push ahead and finish a dish — and they keep time, Michael DeNigris is pushing Picco Tavern out of the image of being a club but a leader in the Italian food industry in the capital of Bergen county. I am so very proud of him.
